Burmester  

Portwein ist wohl der renommierteste Wein aus Portugal. Seine Entstehungsgeschichte ist von Legenden umwoben. Sicher ist nur, dass die Region aus welcher der Port stammt, nämlich das obere Dourotal, die älteste abgegrenzte und reglementierte Weinbauregion der Welt ist, nämlich mindestens seit 1756, als der Marquis de Pombal sein segenreiches Werk in die Tat umsetzte.

 

Die Süße des Ports wird erreicht, indem der Gärprozess durch Hinzufügen von ca. 70%igen, geschmacksneutralen Branntwein gestoppt wird, bevor sich sämtlicher Fruchtzucker in Alkohol gewandelt hat. Oft werden verschiedene Jahrgänge verschnitten. Danach erfolgt die Lagerung im Holzfass oder Stahltank ( einfache Qualitäten / Massenhersteller ).

 

 

Einfache Qualitäten :

 

White Port  - in der Regel 2 Jahre Fass- oder Tanklagerung. Verschnitte, die trocken oder süss ausgebaut werden.

 

Ruby Port   - rubinrote Farbe. Verschnitt, der durchschnittlich 3 Jahre im Fass reift. Kräftig und vollmundig mit etwas Schärfe.

 

Tawny Port - lohfarben. Meist etwas leichter und runder als der Ruby. Verschnitt. mit Altersangabe (10, 20, 30 oder 40 Jahre) ist ein Tawny feiner, vollmundiger und nussiger.

 

Sonstige      - jedes Haus hat spezielle Marken, ob im Stile eines Ruby oder Tawny, die höhere Qualitäten besitzen als die einfachen Ports aber trotzdem Verschnitte sind. Die Lagerzeiten variieren.

 

 

 

Seinen legendären Ruf hat der Port natürlich durch seine Jahrgangssapezialitäten erworben, bei denen folgende Arten zu unterscheiden sind.

 

Colheita      - Ein Tawny, der mindestens 7 Jahre fassgelagert sein muss, aber zuweilen wesentlich länger im Fass gelagert wird (Abfülldatum muss auf der Flasche vermerkt sein). Ein solcher Wein muss qualitative Anforderungen erfüllen, die vom Portweininstitut überprüft werden, um als Jahrgangsport verkauft werden zu dürfen.

 

L.B.V.        - L.B.V bedeutet "Late Bottled Vintage". Die Fasslagerzeit beträgt 4-6 Jahre. Auch dieser Weintyp wird nur in hervorragenden Jahren mit Erlaubnis des Portweininstituts hergestellt. Er ist früher trinkreif als ein Vintage.

 

Vintage       - Nur in Top Jahrgängen wird dieser Wein, wiederum nur mit Erlaubnis des Portweininstituts, hergestellt. Meist nach nur 2 Jahren ( maximal 3) wird dieser Wein auf Flaschen gefüllt. Die weitere Reifung erfolgt in der Flasche. Er ist der am langsamsten reifende und haltbarste Portwein-Typ, leider auch der teuerste. Seine Genussreife erreicht er ab mindestens 10 Jahren.

 

 

Portweine sind grundsätzlich verschnitte aus mehreren Rebsorten, die oft noch in gemischter Pflanzung auf den steilen Weinhängen des Dourotals wachsen. Inzwischen hat man erkannt, dass ein rebsortenreiner Weinberg Vorteile bietet bei Ernte und Pflege.

 

Die wichtigsten Rebsorten für den Portwein sind :

 

Rot             - Bastardo, Dinzelinho, Mourisco tinto, Sousáo, Touriga Francesa, Touriga Nacional, Tinta Amarela, Tinta Barocca, Tinta Cáo, Tinta Roriz

 

Weiss         - Codega, Donzelinho Branco, Esgana-Cáo, Folgazáo, Gouveio, Malvasia Fina, Malvasia Rei, Moscatel, Rabigato, Viosinho
